Fortunate Lemon Chicken For Healthy Food and Diet

 Here's a healthy & easy Lemon Chicken recipe you'll really like.


This is a delicious chicken meal for you to prepare at home. The lemon sauce is fresh and tangy and somehow I always end up eating too much :-).

It's easy to prepare and if you plan ahead, you can prepare it quickly! 

Have most of your ingredients ready in the refrigerator and you'll be able to cook it quickly.  With a little practice, you'll find that you can prepare this delicious meal as fast as any of your favorite chinese food restaurants. With fresh and wholesome ingredients in your own kitchen, you may even like it more. 

I usually make it as a special meal after an active day when I have a hearty appetite. And, it always turns out great!

Fortunate Lemon Chicken

Recipe for four people;

Meat,

4 whole boneless chicken breasts, skin off

½ cup cornstarch (corn flour)

3 tbls water

4 egg yolks – gently beaten

salt, pepper – to taste

shallots – chopped (for a garnish)


Lemon Sauce,

½ cup lemon juice

2 tsp powdered chicken stock

2 tbls cornstarch (corn flour)

2 tbls honey

2½ tbls brown sugar

1 tsp grated ginger

1¾ cups water

For the sauce, combine all the ingredients in a saucepan and stir over a low heat until it boils and then thickens.

Prepare and cook the meat. Cut the chicken breast fillets into 3-4 pieces. Lay flat and pound slightly with a mallet or other heavy object.

Place cornstarch in a bowl and slowly add the water, and then add the slightly beaten egg yolks. Next add salt and pepper to your liking.

Dip the chicken pieces into this batter and ensure you drain well.

Place a couple pieces of the battered chicken at a time, into deep hot oil and fry until lightly browned.

Drain on absorbent paper.

Slice chicken further if required.


Arrange on plates of freshly cooked white rice. Sprinkle with shallots and spoon over hot lemon sauce.

Just a note about this recipe;

  • Don't worry about the sugar, it's not very much. If you've been working out, you deserve a treat.
  • Also, use pure vegetable oil instead of lard or fat. The vegetable oil is actually good for you.
  • A lot of people like rice. However, you can still cut back on calories by serving this over a plate of shredded cabbage and carrots. Your meal will be healthy, filling, and packed with flavor.
  • Garnish with a sprinkle of finely chopped peanuts, red pepper flakes, or flaked coconut pieces. Tasty!
